Explanation

Flax seeds contain natural emulsifiers that stabilize the mixture, resulting in less sediment formation than with the pure, cold-set oat flakes and water mixture. In industry, lecithin or carob bean gum is usually added instead of flax seeds.

Due to the boiling water in the additional experiment, the starch in the oats swells and absorbs water. This makes the consistency slimier. The drink does not taste like oat milk.
