Series of experiments on kiwis and pineapples with milk and oat milk

If the experiment “How can kiwis annoy milkshakes?” interested you and you want to find out more, here are several experiments for test series:

You need for the experiments

  • 2 green kiwis
  • 200 g fresh pineapple
  • 50 g canned pineapple
  • 700 ml milk (3.5% fat)
  • 200 ml oat milk
  • a kettle (with temperature setting or a thermometer for 60 °C)
  • 9 glasses
  • 9 Post-its for labeling the glasses + pen
  • 1 immersion blender with container
  • 2 cutting boards and 2 kitchen knives
  • A kitchen scale (or use quantities by feel: for the pineapple approx. as much as 1/2 kiwi, for the milk/oat milk approx. 1/2 glass)

Conducting the experiments:

  • Label the Post-it for the first glass with “Experiment 1: Green kiwi with milk”. Then label the other Post-its with the further experiments as indicated in the bold headings below. Stick the Post-its onto the glasses.
  • Peel the kiwis and the fresh pineapple.
  • Read the experiment descriptions carefully: For some experiments, the fruits go directly into the immersion blender container; for others, they must first be prepared with hot water or by boiling.
  • Rinse the immersion blender and container after each blending process for the next experiment.
  • Since you cannot carry out all the experiments at the same time, you should prepare an experiment log and take a taste sample of each experiment immediately after completion and again after 10 minutes. Also, check whether the shake is homogeneous or if phase separation occurs.

Experiment 1: Green kiwi with milk

  • Put 1/2 green kiwi and 100 ml milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 1”.

Experiment 2: Boiled green kiwi with milk

  • Cut 1/2 green kiwi into small pieces on a cutting board with a knife.
  • Put the pieces into a glass, pour boiling water over them, and let them steep for 5 minutes.
  • Drain the water and put the pieces together with 100 ml milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 2”.

Experiment 3: Green kiwi heated to 60 °C with milk

  • Cut 1/2 green kiwi into small pieces on a cutting board with a knife.
  • Put the pieces into a glass, pour 60 °C hot water over them, and let them steep for 5 minutes.
  • Drain the water and put the pieces together with 100 ml milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 3”.

Experiment 4: Green kiwi with oat milk

  • Put 1/2 green kiwi and 100 ml oat milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 4”.

Experiment 5: Fresh pineapple with milk

  • Cut the fresh pineapple into small pieces on the second cutting board with the second knife.
  • Put approx. 50 g of these pineapple pieces and 100 ml milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 5”.

Experiment 6: Cooked pineapple with milk

  • Put approx. 50 g of finely chopped fresh pineapple into a glass, pour boiling water over it, and let it steep for 5 minutes.
  • Drain the water and put the pieces together with 100 ml milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 6”.

Experiment 7: Pineapple heated to 60 °C with milk

  • Put approx. 50 g of finely chopped fresh pineapple into a glass, pour 60 °C hot water over it, and let it steep for 5 minutes.
  • Drain the water and put the pieces together with 100 ml milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 7”.

Experiment 8: Pineapple with oat milk

  • Put approx. 50 g of fresh pineapple and 100 ml oat milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 8”.

Experiment 9: Canned pineapple with milk

  • Put approx. 50 g of canned pineapple and 100 ml milk into the container.
  • Blend for approx. 30 s with the immersion blender and pour the shake into the glass labeled “Experiment 9”.

Observe how homogeneous the milkshakes are, whether phase separation occurs, and what the taste is like immediately after the experiment and after 10 minutes.
